[yellow tail] is a family-owned winery in the small country town of Yenda, Australia. To this day, this is where [yellow tail] wine is made by the sixth generation of the Casella family.
In 1957, founders Filippo and Maria Casella migrated from Sicily and arrived on Australian shores. They began making wine with the family’s winemaking philosophy at its heart — to bring family and friends together on any occasion.
Yellow Tail Chardonnay is made with grapes sourced from the highest quality vineyards. The fruit is gently pressed to retain maximum freshness and flavor. Free run juice is then cold fermented using specially selected yeast. Once fermentation is completed the wine is lightly oaked, clarified and bottled on the estate.
It is created with a simple philosophy in mind, to make a great wine that everyone can enjoy, anytime, anyplace. Which is why we hate to tell you what to enjoy it with. If you really want some suggestions, this white wine is perfect for pairing with good friends and your favorite chicken salad.
It’s a blend of selected parcels of fruit from some of Australia's best growing areas, this wine reveals citrus and honeydew flavors nuanced by subtle oak aromas. The palate is soft yet fresh, with balanced acidity and a smooth, creamy finish. A great party wine.
