DoubleWood 12 whisky was launched in 1993, using a process designed by our Honorary Ambassador and Former Malt Master David C. Stewart in 1982, now commonly known as 'wood finishing'.
A 12 year old single malt which gains its distinctive character from being matured in two woods. During its period of maturation The Balvenie Doublewood is transferred from a traditional oak whisky cask to a first fill Spanish oak sherry cask, bringing out sweet fruit and oloroso sherry notes, layered with honey and vanilla.
The Balvenie DoubleWood 12 Year Old Single Malt Scotch Whisky gains its distinctive character from being matured in two wood types, known as "wood finishing". Maturation in American oak casks mellows the spirit and imparts warming layers of vanilla spiciness. After 12 years it is moved for an additional nine months to European oak sherry casks to increase complexity, bringing fruity, honeyed depths.
Each stage lends different qualities to the resulting single malt - the traditional casks, having previously held bourbon, soften and add character, whilst the sherry wood brings depth and fullness of flavour.
Whisky Oak: Many years of maturation in traditional whisky casks mellows the maturating spirit and imparts warming layers of vanilla spiciness.
Sherry oak: Further maturation in European Oak Sherry casks increases complexity, bringing fruity, honeyed depths to the resulting Single Malt.
Tasting Notes:
Nose: Sweet fruit and Oloroso sherry notes, layered with honey and vanilla.
Taste: Smooth and mellow with beautifully combined flavors ~ nutty sweetness, cinnamon spiciness and a delicately proportioned layer of sherry.
Finish: Long and warming
Best enjoyed neat, on the rocks or with a splash of water to expand the flavor.
