The maturing takes place in the so-called "solera process", which is named after the lowest barrel row of a pyramid-type gantry. The quantity removed from the solera is replaced from the respective overlying barrel, the top row being filled with fresh distillate. Over the years, the sherries wander from one barrel to the next, preserving their typical character over decades.
The Sherry Medium from Osborne appears in the glass in a caramell brown and unfolds its fine notes of nuts with hints of sweetness. On the palate this sherry is balanced with an intense finish. Enjoy this sherry as an aperitif, with snacks or tapas.
