Piedmont, Italy. Fontanassa Gavi Ca Adua is an excellent example of the well-known Gavi appellation from the Piedmont region of Italy. This white wine gem is made from 100% Cortese. Marco Gemme farms his 15 hectares using organic viticultural methods. The soil here is rocky and poor, with clay and sand rich in iron. Marco’s consulting oenologist is Gaspare Buscemi, a renowned character who espouses the use of spontaneous fermentation by ambient yeasts and a minimum of 6 months lees contact for stabilization (and complexity) so that the least possible amount of sulfur can be introduced just prior to bottling.
