Late summer barley-hued in the glass, this single malt whisky has aromas of light almond and candied lemon that evolve to toasted barley, flowers and fruit with lemon honey; toffee sweetness comes from American oak barrels and as the spirit opens up hints of succulent papaya, melon and kiwi can be found. The spirit glides over the palate like warm syrup, with sweet flavors of barley sugar, honeyed almonds, green jelly beans and pear drops balanced by fresh lemon and malted barley, while the finish is intense and lingering. The Scotch is a multi-vintage vatting that brings together the finished organic barley from the distillery’s farmers and partners, and is meant to showcase the absolute finesse, purity, definition and elegance of organically grown grains.
