Sidekick Merlot is blended with 15% Cabernet Franc. Both are fermented in stainless steel vertical fermenters. Maceration is 16 to 20 days with once a day pump over. One third of the merlot and all the cabernet franc is then introduced to new French oak and aged for a minimum of six months. Final blending is done a month before bottling. This wine is structured and earthy. Merlot has fallen out fashion, but don't believe Paul Giamatti. This is one of the true great grapes of the world.
