The distillery in La Miel, Venezuela has a long history of producing fine rums, using traditional copper pot stills, as well as batch and column stills. This expression highlights the classic John Dore copper pots – originally used in Scotland to produce whisky – that provide the heart of robust and delightful flavor in the various blends. Here, isolated for reference, is the pot still component, made from sugar cane honey in a long fermentation cycle, before resting in small American white oak casks for eight years. The deep amber color signals a well rested spirit.
