Aldo Viola Biancoviola is a natural white wine made by the Sicilian winery Aldo Viola with the Catarratto, Grillo and Grecanico native varieties in the IGT Sicilia.
the winery located in the city of Alcamo (northwest Sicily) with 16 hectares of organic vineyards. It is currently run by the 4th generation of the family, who make these natural wines with the aim of working in harmony with nature. Starting from the objective of uniting science and tradition to produce the best possible wines, they have a small production of 10,000 bottles per year.
Aldo Viola Biancoviola comes from organic vineyards where a focus on nature works towards the natural fertility of the soil. Organic farming techniques are used together with biodynamic concepts and the harvest is carried out manually at the optimum point of ripeness.
Once in the winery, Aldo Viola Biancoviola ferments spontaneously with native yeasts in stainless steel tanks and macerates for three weeks. It then ages for a few months in steel. It is bottled without filtering.
